Immune Tonic

Ingredients:

· 1 cinnamon stick, broken in pieces

· 3 Tbsp Turmeric

· 1/3 cup Tamarind paste

· ¼ Tsp black peppercorns

· 2 Tbsp Fresh Ginger, finely chopped

· ½ Tsp Mushroom powder

· 1 litre filtered water

· juice + zest of one lemon

. 1 cup coconut milk

· 1 Tsp raw or Manuka honey (when serving)

Method:

1) Toast cinnamon + peppercorns in medium saucepan, over low-medium heat until fragrant (30secs)

2) Pour in water, then add ginger + lemon zest and bring to the boil. Reduce and simmer for 5mins

3) Remove from heat, add lemon juice, coconut milk, mushroom powder, tamarind + turmeric . Stir to combine.

4) Strain tonic, then pour a mug to serve or add to litre bottle and heat as needed.

5) Serve at desired temperature with a tsp of honey
