Spiced Cauliflower Soup

 

Ingredients:

 

·      1 red onion

·      4 garlic cloves

·      ½ head cauliflower (cut into florets)

·      2 fennel bulbs (chopped and cored)

·      500gms of vegetable or chicken broth

·      1 tsp turmeric

·      Pinch cinnamon

·      Pinch black pepper

·      1 tsp sage leaves

·      Pinch fennel seeds

·      2 tbsp. tamari

·      2 tbsp. lemon juice

·      1 knob ginger (peeled)

 

 

Method:

 

1)    Preheat oven to 200 degrees

2)    Place on a baking tray red onion, garlic cloves, cauliflower and fennel.

3)    Bake for 30-35 mins until crispy

4)    Remove from oven and place in a blender with remaining ingredients.

5)    Blend until creamy

6)    Place in a large saucepan and heat through low letting flavours meld.

7)    Enjoy!!
