Sweet Potato, Kale and Bean Salad

 

Ingredients:

 

·      1 medium sweet potato (peeled and cut into 1cm cubes)

·      1 bunch of kale chopped (tear leaves off stalk)

·      1 tbsp coconut oil

·      2 garlic cloves minced 

·      1 can red kidney beans (drained and rinsed)

·      1 tbsp tamari

·      ½ tbsp water

·      1 tbsp miso paste

·      ½ tsp smoked paprika

·      Juice of ½ lemon 

·      ½ tsp pepper 

·      1/3 cup nutritional yeast 

·      Pomegranate seeds 

·      Salt to taste

 

 

Method:

 

1)    Melt oil in a medium fry pan over medium heat

2)    Add sweet potato cubes and sauté until almost tender (lid on)

3)    In a small bowl add; tamari, miso paste, smoked paprika, lemon juice, garlic. Mix together and add to the sweet potato.

4)    Add the chopped kale and beans, as well as the nutritional yeast and stir well.

5)    Cover the pan with lid again and let cook for a few minutes until kale is tender and beans have warmed. Add salt to taste

6)    Garnish with pomegranate seeds
