Immune Tonic

This immune tonic is traditionally an Indonesian herbal drink, used for medical healing. Sweet and sour tamarind, ginger and turmeric are a powerful combination when it comes to fighting inflammation and supporting immune and digestive health.

Ingredients: Makes 1L

  • Juice + Zest of 1 lime

  • 3 Tbsp of ground, organic turmeric

  • 1/3 cup raw local honey

  • 1 cinnamon stick, broken up

  • 1/4 tsp black peppercorns

  • 1L warm water

  • 2 Tbsp fresh chopped ginger

  • 250ml of coconut milk

  • 1/3 cup tamarind paste (puree)

Instructions

  • In a medium saucepan, toast the peppercorns and cinnamon over a low-medium heat until fragrant.

  • Add the water, lime zest and ginger and bring to the boil. Reduce heat and simmer for 5 minutes. Set aside until room temperature.

  • Add lime juice, turmeric, tamarind, coconut milk and honey and stir to combine.

  • Strain the tonic through a fine sieve, then pour into a 1L bottle (Keep in fridge for up to 2 weeks)

  • Add as a morning immune shot or heat till warm as a soothing warm tonic.
