Chicken and Avocado Meatballs

Ingredients

·      500g chicken mince

·      1Tbsp Dijon mustard

·      1 egg

·      2-4Tbsp almond meal

·      Seasoning; salt, pepper, onion seasoning.

·      Ghee or coconut oil (for lightly frying)

 

Method

1)    Add mince and remaining ingredients into large bowl until mixture comes together in a ball. 

2)    Place in fridge for 20-30mins until mixture firms up.

3)    Mash avocado in separate bowl

4)    Preheat oven to 200 degrees 

5)    Create hole in centre of meat ball and place 1 generous tbsp of avocado in centre then close over with your fingers.

6)    Heat oil and lightly fry outside of meatballs till light brown.

7)    Add browned meatballs on baking tray and bake for 20mins or until cooked all the way though.
