Spiced Turmeric Eggs

Ingredients: serves 2

Spiced Turmeric Eggs

  • 6 eggs

  • 1 tsp turmeric powder or fresh

  • 1⁄4 tsp cumin powder

  • 1⁄4 tsp sea salt

  • 1⁄4 tsp black pepper

  • 1 tbsp ghee or coconut oil

  • Handful of coarsely chopped parsley

  • Handful of coarsely chopped coriander

    Serve with

  • A few handfuls of bitter greens

  • 1 tomato sliced or tomato chutney or ferments

  • 1 tsp sumac or seeds

Method:

  1.  In a medium bowl, whisk the eggs, turmeric, cumin, salt and pepper until combined.

  2.  Melt the ghee in a medium non-stick frying pan over a low-medium heat. Add the egg mixture and cook, without stirring, for 30 seconds, or until egg begins to set.

  3.  Add the parsley and coriander and cook for another minute, stirring occasionally, until the egg starts to set in big curds but is still wet.

  4.  Serve immediately on bed of greens, with tomato or ferments

  5.  If desired, sprinkle with sumac or seeds.
