Mexican Omlette

This Mexican inspired omelette is a simple and delicious meal option for breakfast, lunch or dinner. Fill with your preferred choice of protein, for a complete protein fuelled nourished meal.

Ingredients:

·      1 Tbsp Ghee

·      2-3 Eggs

·      Sea Salt

Fillings:

·      ¼ cup of ground mince (chicken/beef or lentils) fried off in Ghee, ½ Onion + Salt/Pepper.

·      ¼ cup chopped Tomatoes

·      2-4 Tbsp mashed Avocado

·      2 Tbsp fermented Vegetables

·      2 Tbsp Cilantro

·      Cultured Cream (optional)

 

 

Method:

 

1)    Melt Ghee in a hot frying pan.

2)    Whisk together the eggs and pour into fry pan.

3)    Distribute the eggs by moving your pan around, let it firm a little, sprinkle with salt and cook almost through until its golden on the golden.

4)    With a spatula, slide it onto a plate and fill one half of the omelette with desired fillings.

5)    Fold in half and top with Cultured Cream and Cilantro
