Paleo Apple Cake
This grain-free beauty is a simple staple in my kitchen - nourishing, wholesome, and easy to whip up. Made with pantry staples, a splash of macadamia nut oil for healthy fats, and sweet seasonal fruit (apples are my staple, along with some wild dried blueberries, but I like switching it up depending on what’s in season), its the kind of cake that feels good to eat. Lightly sweetened with raw local honey, it’s nutrient-dense, delicious and endlessly adaptable.
Ingredients:
2 cups Almond meal
1 tsp Baking powder
1/4 cup macadamia oil (or oil of choice)
2 eggs
2 large apples (diced) or fruit of choice, I also added a sprinkle of wild blueberries to this batch)
Zest from 1 orange
1 tsp Vanilla extract
1/4 cup raw honey (or sweetener of choice)
Method:
1) Preheat oven to 160C (Fan forced)
2) Combine almond meal, baking powder, oil, honey, eggs, vanilla + zest, mix to combine
3) Fold in apples
4) Add to a lined loaf or 20cm round tin
5) Bake for 60-80mins until cooked through
6) Enjoy. Store in a sealed container if it lasts that long!
