Choc Mint Protein Balls

Ingredients:
100g cashews
160g desiccated coconut
6 drops peppermint oil (food grade)
pinch of salt
180g fresh pitted dates
50g cacao powder
4 tbsp protein or collagen powder of choice
50g coconut oil
desiccated coconut for coating
Method:
1) Add all ingredients and pulse until mixture sticks together.
2) Add a dash of water if needed, until desired texture is reached.
3) Roll into balls and coat in coconut.
4) Store in airtight container in the fridge.
