These Choc Mint Protein Balls are the perfect nourishing snack — rich in cacao, refreshing peppermint, and made with simple whole food ingredients. Ingredients:
100g Cashews
160g Desiccated coconut
6 Drops peppermint oil (food grade)
Pinch of salt
180g Fresh pitted dates (Medjool)
50g Cacao powder
4 tbsp Protein or Collagen powder of choice (if desired)
50g Coconut oil
Desiccated coconut for coating
Method:
1) Add all ingredients and pulse until mixture sticks together.
2) Add a dash of water if needed, until desired texture is reached.
3) Roll into balls and coat in coconut.
4) Store in airtight container in the fridge.
