Avocado, Carrot and Apple Salad

Full of healthy fats, flavour and crunch this salad is versatile enough to mixup the core ingredients depending whats in your fridge. This salad will keep you full for hrs due to its healthy fat profile.

Ingredients:

 

2 Medium carrots sliced into ribbons or spirals (with a veggie peeler or spiralizer)

1/2 medium apple, sliced into wedges

Mixed Salad Leaves

½ medium avocado, cut into wedges

2 Tbsp pistachio nuts

2 Tbsp hemp seeds

 

Dressing

2 Tbsp Avocado, hemp or olive oil

2 Tbsp Almond Butter

2 Tbsp Lemon Juice


Salt/Pepper

 

Method:

 

1)    In a medium bowl add salad ingredients

2)    Combine the dressing ingredients and shake well.

3)    Toss through dressing with salad ingredients

4)    Accompany with your favourite protein or enjoy on its own.
