Warm Beetroot, Chickpea and Broccoli Salad

This salad contains liver supporting ingredients, phytonutrients, essential fatty acids, along with a lovely nutritional profile to balance hormonal levels.

Ingredients:

 

1 large Beetroot, washed and coarsely grated (no need to peel)

2 Tbsp Olive Oil 

¼ cup Hemp Seeds

1 red Onion, finely diced

1 small Broccoli head, coarsely chopped 

Small handful Sour Cherries

Can of Chickpeas

Salt + Pepper

 

Dressing

2 Tbsp Olive Oil

2 Tbsp Apple Cider Vinegar

 

Method:

 

1)    In a small pan, gently heat olive oil, fry the onions until softened

2)    Add the beetroot and cook until soft.

3)    Add the beetroot/onion mixture to the broccoli.

4)    Dress with simple dressing

5)    Sprinkle on hemp seeds and sour cherries.

6)    Season to taste 

7)    Accompany with your favourite protein or enjoy on its own.
