Baked Salmon and Asparagus

Aiming for 2-3 serves of Essential Fatty Acid meals per week is advised.

Baked salmon is a nice easy way to add an oily fish meal to your week.

Bake extra and add it to a salad the next day!

 

Ingredients:

 

·      4 salmon fillets

·      2 bunches of asparagus

·      4 cloves of garlic (minced)

·      1 ½ tbsp fresh dill (chopped)

·      3 tbsp olive or coconut oil

·      ½ lemon + zest

·      1 tsp Salt and ½ tsp pepper

 

 

Method:

 

1)    Preheat oven to 220 degrees

2)    Place salmon and asparagus on lined baking tray

3)    Season all over with salt + pepper

4)    Sprinkle dill on salmon

5)    In a small bowl combine oil, lemon juice + zest and garlic

6)    Bake for 8-10 mins until salmon is cooked to your liking.

7)    Serve with a green salad or a bed of sweet potato or cauliflower mash.
