Mushroom Spaghetti

Mushrooms are one of my favourite “super foods” and are enjoyed beautiful in this quick and simple spaghetti dish.

Ingredients:

 

·      1 packet of adzuki bean pasta (or pasta of choice)

·      ½ can coconut milk

·      2 large tsp of almond butter (or peanut butter)

·      sprinkle of sesame seeds

·      250g mushrooms sliced

·      Pinch or two of cayenne pepper

·      1 tsp of brown rice miso paste

·      1 lime

 

·      Olive oil (to cook mushrooms)

·      Salt + pepper to taste

·      Serve with fresh sliced chilli, spring onions and sesame seeds

 

 

 

Method:

 

1)    Cook pasta as to directions, and then strain.

2)    Heat olive oil in a low/medium pan. Lightly cook mushrooms.

3)    Add coconut milk, almond butter, miso paste and cayenne pepper for about 5 mins until flavours have immersed.

4)    Taste and add more cayenne or salt/pepper if needed.

5)    Toss through pasta until well coated.

6)    Serve and top w chill, spring onions, sesame seeds and a good squeeze of lime.
