Asparagus Pesto Salad

This green delight is a simple fresh salad that can be enjoyed on its own, or teamed with your favourite protein. Fresh asparagus, lightly panfried has a sweet and crunchy pleasure.

 

Ingredients:

 

·      2 Tbsp Ghee (or coconut oil)

·      2 bunches of Asparagus 

·      Store-bought or homemade Pesto

·      Feta

·      Mixed sprouts 

·      Salt/pepper 

 

 

Method:

 

1)    Melt Ghee in a medium sized pan over med/high heat

2)    Add asparagus and pan fry until cooked through, but with still a crunch.

3)    Season with salt/pepper 

4)    Add to a plate and drizzle with pesto and top with feta and sprouts
