Simple home-made rocky road

Ingredients

3 cups chocolate, melted (homemade or 85% dark chocolate)

2 cups mixed nuts and/or seeds, toasted.(I used pecans, pistachio kernels, macadamias and pumpkin seeds)

1 cup raspberries

1 cup blueberries

1 cup mixed berries

Method

Melt chocolate in a saucepan over low heat.

in a fry pan, add nuts/seeds and toast till aromatic and golden brown. toss frequently.

In a bowl add berries and combine.

Line a loaf or cake tin with baking paper. Pour half the melted chocolate, cover with mixed berries and nuts. Pour remaining chocolate over the top and cover ingredients evenly.

Transfer to freezer and allow to set for 30-45 mins, before slicing into chunks.
