Vegan Chocolate avocado cookies

INGREDIENTS:

1 1/4 cups of gluten-free or plain flour 1 tsp baking powder
1/2 tsp sea salt
2/3 cup raw cocoa powder

1/4 cup melted coconut oil 1/4 cup mashed avocado 1/4 cup raw honey
1 tsp vanilla extract

1/3 cup almond milk (or milk of choice) 1/2 cup dark chocolate chips

METHOD:

1) Preheat oven to 180 degrees . Line a baking tray with baking paper.

2) In a medium bowl, whisk together flour, baking powder, salt and cocoa. Set aside.

3) In a blender or mixer, beat the coconut oil, avocado and honey until smooth and creamy. Add the vanilla extract.

4) With the mixer on low, add half the flour mixture. Add the milk and then add the remaining dry ingredients. Mix until flour disappears. Stir through the chocolate chips.

5) Form dough into tablespoon balls (wet hands make this easier) and place on baking tray. Press down gentry with your palm.

6) Bake for 10 minutes, then transfer to a cooling rack.

7) Once cool, store in an airtight container and enjoy!
