Creamy Broccoli Soup
This creamy soup only has a few ingredients but packs a punch of flavour and nutrients
Ingredients
1 garlic clove
250g broccoli (cut into florets)
150g cauliflower (cut into florets)
150g leek (white part, roughly sliced)
500g chicken broth or stock (vegetable for veg option)
60g ghee/butter or coconut oil
1tsp sea salt
Pepper to taste
2 egg yolks
Method
1) Chop garlic and place in large saucepan with vegetables and all other ingredients except egg yolks.
2) Simmer for 20mins.
3) Cool slightly add egg yolks and blend until smooth with a stick blender or food processor.
4) Add extra seasoning if needed, and a drizzle of olive oil.
